10.0 ORGANISATIONAL MANAGEMENT
10.1 Human resources
The following staff complement is required. The owner, Dan White, will serve as Executive Chef.
- Chefs – five (including Executive Chef)
- Managers – two
- Waiters – eight
- Runners – three
- Kitchen hands – two
The large hospitality industry on the Garden Route means that skilled and experienced staff are readily available. Staff will be recruited by advertising in the local community newspaper, as well as by word-of-mouth using the owner’s industry connections.
All staff will already be trained/qualified, although Dan White will hold ongoing training sessions to ensure staff are schooled in the Gourmet Dan ‘way of doing things’.
Staff pay structure is as follows (per month):
- Executive Chef – R25 000
- Sous Chef – R22 000
- Chef de Partie – R15 000
- Commis Chef – R6 500
- Commis Chef – R6 500
- Managers – 2 x R17 500
- Waiters – 8 x R1 800
- Runners – 3 x R2 500
- Kitchen hands – 2 x R2 500
Total wages & salaries = R136 900 (per month)
NB: Depending on peak season demands, additional casual staff may be employed, or permanent staff requested to work overtime.
NB: No cleaning staff have been employed as this task will be outsourced
10.2 Management
Dan White is the sole proprietor. Diploma in Culinary Science, Le Cordon Bleu School London (1978). Associate Diploma in Restaurant Management, University of Southern Cape (2007).
He has 30 years’ experience as a Chef in 5-star hotels in the UK and Europe. He was Executive Chef at the 5-star Park Lane Hotel in London before leaving to enter the restaurant business. He owned ‘Le Petite Maison’ restaurant in Cape Town for five years (2005 –2010), before selling the business and relocating to Knysna.
A team of two managers will be recruited to assist with running the restaurant, including administration and staff matters.
