5.2 Stock Analysis

Type of stock:
Alcoholic and non-alcoholic beverages; raw ingredients for food preparation (meat, fish, fruit, vegetables etc). Sauces, condiments and food additives

Av. stock value:
R30 000 per day. (high season estimate)
R15 000 per day. (low season estimate)

Stock turnover:
In line with industry averages. Fresh produce every 2/3 days; Beverages every 7 days

Seasonal variances:
Stock holding will vary by approximately 50% between low and high season

5.4 Supplier research

Food and beverage supplies are readily available on the Garden Route due to the large number of hotels/restaurants/guest houses/resorts. In almost all instances, multiple and competing suppliers are available for any required product or service. This is supplemented by daily/weekly local farmers’ markets in most of the surrounding towns and villages. In certain instances, individual farmers or fishermen from the region also offer daily or weekly deliveries.

Because of Gourmet Dan’s focus on innovative food dishes which are not readily available elsewhere, we will seek to cultivate special relationships with individual farmers, fishermen and growers.

There are also several established suppliers of restaurant equipment, sanitation services and beverages.

Credit policy:
All suppliers operate a strict COD policy for new restaurants. This will typically be reviewed at the end of the first year of business in the case of the large and established suppliers. Smaller suppliers do not extend credit at any time

Delivery policy:
All key suppliers listed above offer a delivery service, if required

History & reliability:
All the companies listed as key suppliers are well established and reliable. The three individuals listed are dependant on farming and fishing conditions

Shortages:
It is in the nature of the industry that shortages will occur from time to time due to weather, seasonal and other conditions. However, the Gourmet Dan menu will be sufficiently flexible to accommodate this

Cost fluctuations:
It is normal that these will occur during peak season and when certain food items are in short supply. The menu will be sufficiently flexible to allow seasonal price increases or for certain items to be withdrawn
