8. LEGAL
8.1 Mortgage/rent requirements
Premises leased from Waterfront Holdings Limited at rental of R40 000 a month. Four year lease with an option to renew for a further three years. Escalation of 6% per annum for first four years.
8.2 Regulations & permits
The following are required:
- Restaurant trading licence from Knysna Town Council
- Health inspection certificate from Knysna Town Council
- Liquor Licence from Western Cape Liquor Board
8.3 Trademarks & copyrights
Gourmet Dan name, logo (‘Desperate Dan’ comic character carrying a meal) and trademark will be registered. This is important, as the long-term strategy includes franchising.
